Fig Spread recipe

When I lived in New York I  discovered a delicious Croatian Fig Spread in Whole Foods and long story short: I became completely addicted after my first drop. Fig Spread goes super well with all kinds of cheese – My favorite combo is fig spread with some kind of spicy cheese such as Pepper Jack or Chili Gouda.
Since I moved back home I have been looking for fig spread every where I go and I have only found it once and it costed a million. So decided to make some myself. I have been experimenting with the recipe for few days now and I finally figured it out and made a perfect jar of my favorite jam.
So this year everyone I know will be receiving a jar or two for the holidays. Hope you like it!

Fig Spread Recipe:

400g dried figs, stems removed
2 1/2 dl freshly squeezed clementine juice
2 dl water
1/2 dl brown sugar
1/2 dl white granulated sugar
Zest from 2-3 small clementines
Thumb sized piece of fresh ginger, chopped

1. Put the figs, clementine juice, water, clementine zest and ginger in the saucepan. Bring to the boil.
2. Reduce the heat and cover. Leave to simmer until the figs become tender.
3. Let the mixture cool down. Once cooled, add to a food processor or a blender and process or blend until smooth .
4. Stir in the sugar. Stir continuously over low heat until the mixture thickens enough to be a spread. This will take about 10 minutes.
5. Spoon the spread into sterilised jars and decorate with a ribbon. The spread should be stored in a cool, dark place, or keep it in the fridge.
