Tomatelicious – Recipe for Fresh Tomato Sauce
We have an agreement with friends who live really close by, that every time we travel the other couple takes care of plants and empties the mailbox while away. We are definitely the luckier couple, because these friends of ours have a beautiful balcony that is filled with plants, flowers and herbs, so while they are away it is like eating from a buffet of fresh ingredients. The other day when I went over to water their plants, the tomato plant surprised me with an overload of bright red cherry tomatoes. I picked 1.5 kg and made a delicious home made tomato sauce from scratch. It is not that you get a lot from 1.5 kg, I only made one jar for us and placed one jar in their fridge as a Welcome Home surprise, but let me tell you: It was absolutely delicious. 1. Cut a tiny x at the bottom of every single tomato 2. Bring water to a boil and drop all the tomatoes in for 30-60 seconds 3. Take the tomatoes up of the boiling water and throw them in ice water 4. Now peeling the skin of should be easy and effortless. Discard the skins 5. Squeeze the seeds out over a strainer over a bowl and reserve the juices. Discard the seeds 6. Finely chop the onion, garlic and celery, and throw in a pan with a good dash of olive oil. 7. Let the vegetables simmer under lid, on medium heat for about 10-15 minutes, the longer the better 8. Add the tomatoes and the tomato juice 9. Let simmer under on medium-low heat for 30 min 10. I like my tomato sauce fine, so I pureed it with my magic hand mixer 11. Dash in the wine and throw in the basil and continue to let the the sauce simmer for about 15-30 min more 12. Serve with fresh whole-wheat pasta and parmesan
