The Birthday Banana Muffin
My wonderful husband had birthday last week and it is tradition at his workplace to bring cake to work on special days. But unfortunately we have both been super busy so we forgot all about the cake-bringing-tradition. So yesterday while staring at some old and soft bananas I decided to whisk together some banana muffins for him and his fellow ad-men.
The muffin itself is spongy and soft and then I made a crunchy top and melted some chocolate, just to surprise the taste buds just a little.
Muffins
115 g butter
2.5 dl sugar
2 eggs
3 bananas, mashed (ca 2.5 dl)
1/2 vanilla bean
2.5 dl buttermilk
4.5 dl flour
1 tsp salt
2 tsp baking powder
Topping
1/2 dl flour
1/2 dl oats
1/2 brown sugar
2 tbsp cold butter
100 g melted dark chocolate
1. Preheat the oven to 160°C
2. Whisk butter and sugar together until light and fluffy
3. Add one egg at a time and mix well after each one
4. Add the mashed bananas and the seeds from the vanilla bean. Mix well
5. In another bowl stir together the flour, salt and baking powder
6. Fold (no more mixing) 1/4 of the flour mix to the creamed mixture alternately with buttermilk, until there is nothing left.
7. Divide the batter into muffin forms (around 15)
8. For the crunchy topping combine flour, oats and brown sugar in a bowl. Then cut the butter in chunks and mix in.
9. Sprinkle a rounded teaspoon of topping over each muffin
10. Bake for ca 20 minutes.
11. When the muffins have cooled completely dip them into the melted chocolate (or use a spoon and let it drip on the cakes)
