Homemade Pizza
I had guests coming over for dinner but no time to prepare so I decided to make it easy for myself and serve homemade “healthy” pizza and plain arugula/avocado salad. I made the crust super thin and crispy with 30% regular flour and 70% mix of whole wheat and spelt, and with fresh toppings my pizzas were a great success. I made one white (no sauce) potato pizza with rosemary, parmesan and topped with some red pesto, One with prosciutto di parma and arugula,and one with italian salame and red bell peppers. On the side I had homemade garlic oil and some chili oil. Pizza Crust (makes 4 pizzas) 80 g fresh yeast 8 tbs lukewarm water 600 g Flour (I used 180 g regular and 420 g mix of whole wheat and spelt) 2 tbs Olive oil 2.5 dl cold water pinch of salt 1. Dissolve the yeast in the lukewarm water 2. Sift the flour and mix everything together 3. Let the dough rise for an hour in a clean bowl with a clean kitchen towel on top 4. Knead the dough and form 4 thin crust pizzas
