Imagine waking up to the smell of freshly baked bread and freshly brewed coffee on a saturday morning. It is heaven I tell you. This bread recipe is the easiest in the world and requires no skills, leaven, fancy mixer or a preheated oven. Try it and surprise you family with a magic loaf this weekend. All you need is a big bowl, mixing spoon and a loaf pan 25 g Active yeast (not the powdered dry stuff) 3 dl lukewarm water 1 egg little bit of salt 1 tbs honey 6 dl mixed flour. I usually use a mix of regular all-purpose flour, spelt and graham flour 4 dl mixed seeds. I use what ever I have and it changes from time to time – Sunflower seeds, flax, pumpkin seeds, oats, sesame seeds, caraway…. you can also supply the mix with nuts of some kind. 1. Dissolve the yeast in the lukewarm water 2. Add the egg, salt and honey and stir together 3. Stir in the mix of seeds (and nuts) 4. Stir in the flour mix Cover the loaf pan with parchment paper. Pour the doug (The doug is not liquid but it is not super firm either) into the loaf pan and place it in the cold oven. Turn the oven on 180 °C and bake the bread for about 45 minutes. You should check the bread after 30 min and if you find it becoming dark on top cover it with foil and keep baking. The bread is ready when you insert a fork (I use a chop stick) and it comes out clean or with only few crumbs.
