Fig Jam with Rum – Recipe

Last year I made Fig Spread with great success and gave small, decorated jars to friends and family for Christmas. For those of you that do not know the wonders of Fig Jam – it is originally from Croatia and absolutely the best jam to go with a mixed cheese plate! 

 

The Fig Spread post is one of my most viewed recipes here on the blog, and I have received so many emails and facebook messages from people telling me that they tried out my recipe and loved it. (The best letter of them all was from a Croatian reader, who complemented me on the jam) This year I decided to try my luck and do it again, this time with a twist! Fig Jam with Rum!

Recipe: Fig Jam with Rum

Ingredients

  • 400 g (14 oz) Dried Figs, stems removed
  • 4 tbsp Dark Rum
  • 4 tbsp Lime Juice
  • 3 dl (1 1/3 cup) Water
  • 1 little piece of fresh Ginger
  • 4 tbsp Brown Sugar
  • 3 tbsp Sugar

Directions

  1. Put the figs, rum, lime juice, water and ginger in a saucepan. Bring to the boil

  4. Stir in the sugar. Stir continuously over low heat until the mixture thickens enough to be a spread. This will take about 10 minutes.
  5. Spoon the spread into sterilized jars and decorate with a ribbon. The spread should be stored in a cool, dark place, or kept in the fridge.
